Alys’s Eclipse - 5 oz ashed disc aged in a white bloomy rind
Cheesemaker’s Choice (or your choice - please email me if you’ve a preference) that may be any of the other five cheeses I’m making this spring (Claire’s Mandell Hill, Ellie’s Cloudy Down, Hanna’s Awashed, half Greta’s Fair Haven, or half Ode to Joy).
All have been multiple-time winners in the annual American Cheese Society competition.
Price includes insulated 1-day ground shipping to New England states, NJ, DE, eastern NY and eastern PA. Delivery only to these areas at this time.
